waldorf chicken salad
Waldorf Chicken Salad INGREDIENTS 2 to 2 1/2 cups diced or shredded chicken breast (I used the breasts of one rotisserie chicken) 1 cup celery, sliced (about 1 1/2 stalks and leaves) 1 cup apple, diced 2-3 scallions, sliced (about 1/4 cup) 3/4 cup chopped walnuts 1/2 cup mayonnaise 1/2 lemon, juiced salt and pepper DIRECTIONS 1. In a medium mixing bowl, stir together chicken, celery, apple, scallions, and walnuts. 2. Add mayonnaise and lemon juice and stir until well combined. Salt and pepper to taste. 3. Eat alone, add on top of a bed of lettuce, or sandwiched between two slices of bread. Refrigerate any leftovers.
